Devil Pizza Diavola Recipe

Devil Pizza Diavola Recipe

Ingredients for the Dough

– 1 kilogram of all-purpose flour

– 2 teaspoons of dried yeast

– 2 teaspoons of olive oil

– 680 milligrams of water


Ingredients for the Pizza

– 300 grams of peeled tomatoes

– 120 grams of hot salami

– 2 pickled jalapenos

– 200 grams of scamorza

– 1 tablespoon of olive oil




Step 1. The Dough

So we figured that there is a certain consistency to the pizza dough in order to properly accommodate the spice in this pizza.

First, activate the yeast by mixing it in a bowl with 2 tablespoons of lukewarm water. This will get the yeast started and will actually be better for the dough later on.

While waiting for the yeast to dissolve, mix the flour and salt in a separate bowl. Keep on mixing until the salt has mixed with the flour entirely and then make space on the center of the mixture.

Pour the water in the middle and then the yeast mixture as well. Mix it with your hands, it will turn out sticky but that is okay, then cover it and let it rest for 5 minutes for hydration.

Lightly flour your working space and then knead the dough for at least 2 minutes. Return it to the bowl and refrigerate it for at least 1 day.

Step 2. The Sauce

Strain the tomatoes and reserve the juice for other use. Then, press the tomatoes onto a colander and into a bowl.

Simply stir until the tomatoes are broken down and then add salt to taste. Mix the salt in and then stir to make the sauce smooth.


Step 3. Preheat the Oven

On the following day, divide the dough into six equal portions. Get one ball and then let it sit at room temperature so that it thaws a little bit from the refrigerator.

Preheat the oven to the highest temperature while waiting for the dough. Use a pizza stone for the cooking and preheat it as well in the oven.

This step needs to be done before going through the ingredients or else, the oven will not heat up to the desired temperature if you do this late in the process.

As the dough thaws, knead it and create some tension on the flour. Pull it to the sides and then roll the edges under before putting it in a greased bowl and cover it with a plastic wrap and let it rest.


Step 4. Shape the Dough and Arrange the Pizza

After an hour and a half, or when the dough has doubled in size, start stretching it using your hand by pushing from the center outward until you have created a 12-inch round shape.

Make sure that there are no holes in the dough. Then, spread the tomato sauce over the dough and leave about half an inch on the edges.

Brush a little bit of olive oil on the edges to make the crust crispy later on. Place the sliced hot salamis on the pizza touching each other but making sure that no salami overlaps with the other.

Place the jalapenos as well and then top it all off by sprinkling the cheese on the toppings. 


Step 5. Baking

Once the oven has reached the desired temperature, you can start cooking. If your oven can go up to 450 degrees Fahrenheit, then that is the temperature that you need.

Slide the pizza in the oven using a floured pizza peel and then let it cook for about ten minutes or until the crust has turned golden brown and the cheese is melted.

Let it cool for a bit, slice, and then serve!
