Low-moisture fresh mozzarella has a denser and drier texture than regular or fresh mozzarella. The reason behind this is that low-moisture mozzarella is aged a little longer than fresh mozzarella.
It is an American invention that also includes treating the skimmed cow’s milk with chemicals in order to lessen the moisture content.

The longer aging period also allows the low-moisture mozzarella to develop a saltier flavor and is common for American pizzas.
