There are many pizza variations, and I am not only talking about the flavors or types of toppings, the size is crucial and it is useful to know how much dough for a 12-inch pizza is enough.
Whether you are making a 10-inch, 12-inch, 14-inch, 16-inch, or larger pizza, you need to make sure that the amount of dough you will be using has the right measurements.
Figuring out how much dough you should use on your pizza is important as it can determine the crust’s consistency and texture, and this will give your pizza a much better result.
If you are obsessed with the weight or amount of dough to be used, you should study the dough math down to the last ounce or measurement in grams to get the perfect pizza at home.
There are also variations in the type of pizza you will make. You will need to have more dough with certain pizzas such as deep-dish, Neapolitan, or other pizza recipes.
It is helpful to have a great wood-fired pizza oven like the Ooni pizza oven, but making the perfect pizza recipe is to measure the right amount of ingredients you will use.
How Much Dough Do You Need?
This is pretty easy to figure out if you have a weighing scale for food around.
The first step to knowing the right amount of dough to be used is to know the weight of the entire pizza.
Deep-dish pizzas will have a slightly heavier weight than Neapolitan pizzas or other pizzas with lighter toppings and thinner crusts.
Relying on the dough ball size alone will never be enough.
First, you will need to find the right type of flour needed in your pizza.
At this point, I have learned that the best flour you can get is a Tipo 00 flour for making the best pizzas at home.
It has also come naturally to some pizzaiolos and pizza enthusiasts the amount of flour to be used on a perfect pizza.
However, this will take years of practice, so be patient with yourself.
As a rule of thumb, you can use a little less than 1 ounce, which is 25 in grams for every inch of pizza you will make.
This is not the most accurate but it does make a good start for beginners.
For your 14-inch pizza, you will need around 12 ounces of flour, 14 for 16-inch pizzas, 8 for 10-inches, and so on. So for your 12-inch pizza, you will need about 10 ounces, 340 in grams.
Having the right pizza pan for your 12-inch pizza will also determine how much the dough should weigh. Make sure you have the right one or invest in a good pizza pan.
The Dough Math
If you are not confident with the estimates above, you can use a weight calculator to get the most accurate.
That is where you will know how much the dough should weigh for your pizza.
While it was a mystery how much dough is needed for specific sizes and shapes, you can now easily get accurate measurements.
It does not need to be too complicated as it is really easy.
All you need to do is get the surface area of your pizza. For this article where we are talking about 12-inch pizzas, you will need to follow this equation: 3.14 multiplied by 36.
3.14 is needed to get the surface area of the pizza as it is the value of pi.
The number 36 is the radius of the pizza and is multiplied by itself, this will give you the accurate result.
Since the rough estimate is 12 ounces of flour, you will get around 1 ounce per square inch.
That is only around 28 in grams, so you do not need a lot of flour for the pizza.
The other ingredients make the dough a bit heavier on the weight calculator.
That includes water, salt, yeast, and sometimes, sugar make the perfect dough.
How Much Should Pizza Dough Weigh?
Now that you have figured out how much flour you should use for your pizza, we can proceed to the amount of dough needed to make 12-inch pizzas.
That means that we will now be including the other ingredients for making the entire dough.
There are standards for how you should make your pizza dough and the entire pizza.
During your first cooking, you should always follow the flour recipe first.
Making the dough is the most important as it is the part that holds the entire pizza together, including the toppings.
The dough will differ depending on making a thick crust or a thin-crust pizza.
For thick crust pizzas or for pizzas that will have a lot of weight like deep-dish pizzas, you need a lot of dough.
If you are going to make it in batches, you will need to divide the dough ball into two wherein you weigh the first one to be 200 grams and the second 400 grams before letting them rest.
The dough ball size and weight should depend on the size of the pizza.
For 12-inch pizzas, you will need to have the weight calculator and the dough should be 283 grams in weight.
Dough Hydration
To know how much dough is needed for your pizza, you should always keep in mind that you are still going to use water for the recipe, and the pizza dough hydration level will also determine the consistency of the dough.
If you will make Neapolitan pizzas in your Ooni pizza oven, you will need the dough to have at least 55.5% hydration and no more than 62.5% hydration to get the right consistency.
New York-style pizza does come close with 60% hydration while Chicago deep-dish pizzas need only 55% hydration.
The dough that needs the most hydration level is Detroit pizza with 70% hydration.
The benefit you get here is that the high hydration dough will be more fluffy.
However, that still depends on the type of pizza oven you will use to cook the pizza in.
If you do not cook it the right way, the dough will just become soggy.
So you need the perfect pizza oven for your pizza recipe to cook the right way, and I recommend you use Ooni pizza ovens.
Remember that hydration affects the consistency of the dough and its quality once it is cooked.
That is why the higher the hydration level, the better the result will be if you cook it right.
It also takes a lot of practice so there is a high chance that you will be messing up on your first try.
So be patient and keep making your favorite pizzas at home and you will soon get the hang of it.
The Ideal Pizza Dough
Whether making large 16-inch pizzas or average 12-inch pizzas, you need the right ingredients and measurements to get the perfect pizza dough and cook the perfect pizza crust.
You do not need many things to make the perfect dough.
You also do not need a specific set of skills as all you need to remind yourself is to keep the ingredients fresh.
Never use old ingredients so that you do not mess up the ingredients.
For your 12-inch pizza, you will need 2 and a half teaspoons of active dry yeast, half a cup of warm water, half a teaspoon of sugar, and 2 cups of flour.
You can also add a tablespoon of vegetable oil to make the dough less sticky.
The water should also be around 95 to 110 degrees Fahrenheit to ensure that the yeast is activated.
I prefer kneading the dough by hand but it will be too tiring, especially if you are a beginner, but that also depends on the dough ball size and weight. Using a stand mixer will also do.
It will be hard to adjust at first as you need to make sure that you do not overwork your dough.
Once you have your dough ready, you will make the best pizza recipe at home.
You can use an app called PizzApp+ as it is the best way to determine the quantities for the ingredients for a given weight of the pizza dough ball.
So now that you know how much dough you will be using for your 12-inch pizza, go get your favorite toppings and recipe guide and get cooking!
