What You Will Need
For the bread that you will use as the sandwich, you can select any type of bread you want. Get the bread that you are used to toasting so you do not need to adjust the time for toasting.
If it is your first time making this and you want more options other than sandwich bread, then you can make one with sourdough bread as it is easy to toast and it blends well with the pepperoni.
A regular loaf of bread is good but why not go with better garlic bread? It is the perfect type of bread to go with the toppings as long as you make it firm enough to hold the pepperonis.
The cheese used in this recipe is really important as you need to think of the grilled cheese concept and not only the pizza. So for me, I chose the American-style cheese and got ½ pound.
You can also go with the cheese that you love the most when making grilled cheese. For me, I went with the American-style cheese and a little bit of mozzarella for that amazing stretch.
You will also need to get pizza sauce so purchase your favorite brand of pizza sauce. 2 ounces will be enough as you do not need a lot as it might make the bread soft or too wet when cooked.
That will be enough but you can also go with a little bit of butter for toasting the bread. Either that or go with olive oil but I suggest you go with butter as it adds a more delicious flavor to it.
Pepperoni Grilled Cheese Pizza Sandwich
Step 1: Prepare The Bread And Layers
Build the sandwiches by starting with four pieces of sourdough bread on a clean work surface or a baking sheet. Lay them side by side and get the slices of cheese first to put on the bread.
For each slice of bread, go with 4 slices of cheese and distribute them with 2 to cover the bread and two for the deep sides. Get the pepperonis and lay them on top of the American cheese.
If you have small pepperonis, then 8 pieces will do for each layer. Just adjust the distribution according to the sizes of the slices and the pepperonis to arrange them evenly throughout.
On each sandwich, spread a thin layer of pizza sauce. Use about one ounce on one slice and spread it on top of the pepperonis before placing the mozzarella cheese on top of the sauce.
Top the two finished sandwiches with another slice of sourdough bread that already has cheese on it. Each sandwich should have 8 slices of cheese, 4 at the bottom and 4 on the top.
Make sure the cheeses on the top sandwich are facing the pepperonis. Set them aside and prepare the other things that you need before cooking or add some ingredients you want.
Step 2: Prepare For Cooking
Melt the butter on a pan over low heat and then wait until it is a smooth liquid. Use a pastry brush and brush the melted butter over one side of each sandwich and be liberal with it,
Put as much melted butter as you want on the sandwich but do not overdo it. Just make sure you cover the entire surface of one side of the sandwich.
Do this on all the sandwiches and then get another pan to cook the sandwiches on. You can then cook the sandwiches on the pan by following the instructions below.
Step 3: Cook The Sandwiches
Heat the pan over the stove at high heat until it is hot enough to grill the sandwiches on. Place one of the sandwiches on the pan with the buttered side down and let it toast for a little bit.
Turn the heat down to medium and cover the pan with a pot lid to keep the heat inside the pan. Give a little bit of airway to let the moisture out but not too much so that the cheese will melt.
Check the bread after about 3 to 4 minutes and look for a nice golden brown color. A darker golden brown color is not a bad sign as well as it will have made the bread sturdy enough.
Before flipping the sandwich over, brush the other side with butter. Do the same process with the pot lid on and then check the color once again after 3 to 4 minutes to see if it is cooked.
If the cheese is not yet melted, turn the heat down to low and then cover the entire pan with the lid. Check after one minute and make sure that the bread is not burning until the cheese is melted.
Once the cheese is melted and the bread has a darker golden brown color, remove it from the pan and do the same with the rest. Serve on a plate, cut in half, and enjoy the sandwiches!
Sandwiches are not necessarily good when you reheat them but it is possible to keep both the flavor and texture of the sandwich even when you leave them for four days in the fridge.
You just need to store them properly by wrapping them in a plastic bag and inside a sealed container. Letting them store in the fridge will last for up to four days so cook them beforehand.
Putting them in the freezer will last longer but you have to take extra measures by wrapping the sandwiches first with aluminum foil before putting them in a sealed container and into the freezer.
