The problem is that you cannot just simply cook pizzas on the OTG, just like how you do on the other three appliances.
You need to do some work to make sure that the pizza cooks.
While it gives off enough heat to cook the pizza, there are times when the pizza crust is soggy because both the space inside the OTG and the heat it produces are not optimized the right way.
There are a few methods and techniques that you can use to perfect that pizza of yours with the OTG.

What Mode Should You Use?
There are different types of cooking styles that you can use with your OTG.
You can find those in the settings, and you can select which cooking style is perfect for the recipe you are cooking.
For your pizza, you will get the best results if you use the convection cooking method.
This makes the OTG produce heat that can get to all sides of the pizza that you will cook.
Using the convection setting will heat the grates and the rod, and the air within the OTG.
This helps in cooking the pizza toppings properly while the crust is becoming crispy.
You can change the settings if you think that the convection mode is not working or not cooking the toppings properly. That is one benefit of using OTG; you can cook in other modes.
Cooking With A Pizza Stone
One of the best ways to cook your pizza and create a crispy crust is to use a pizza stone.
It helps remove the unnecessary moisture from the dough for a crispy result at all times.
There are some risks of using pizza stones on some appliances as it is very sensitive to sudden changes in temperature. You risk breaking the pizza stone if you are not careful with cooking.
With an OTG, you do not have to worry about that as it does not use direct heat.
The heat from the metal rod is just what is needed when cooking your pizza with a pizza stone.
Step 1: Preheat The Pizza Stone And The OTG
Prepare your pizzas, and while the dough is resting, you can preheat the OTG.
These appliances can reach temperatures of up to 500 degrees Fahrenheit, so set yours on that.
Place the pizza stone on the bottom rack and then close the door.
Make sure to preheat the pizza stone with the OTG, as it will help create an oven spring to cook your pizza perfectly.
Oven spring is like a sudden temperature spike in the OTG before balancing or making the temp even throughout the interior of the OTG. It will cook the pizza evenly throughout.
Step 2: Cook The Pizza
Arrange the pizza toppings on your pizza dough, and then place the pizza on a floured pizza peel. Carefully slide the pizza into the OTG and on the pizza peel by making a jigging motion.
Close the door of the OTG immediately, so you do not lose heat. At 500 degrees Fahrenheit, your pizza should be done at around 5 to 8 minutes, so you can check after that.
Most OTGs nowadays have a glass door where you can see the insides, so there is no need to open the door to check the pizza while cooking. Just wait until done.
Once the crust is browned, and the cheese is melted over the toppings, remove the pizza from the OTG. Let the pizza for about 5 minutes before slicing it, and then serve while still warm.
Using Pizza Steel Or Pan
There is a similarity between using a pizza stone and when using pizza steel or pan.
They can both cook the crusts perfectly, so you do not have to worry about the crispiness.
However, I have tried another method, and it works better than just putting the pizza on the pizza steel.
You can pre-cook the crust before putting it in the OTG, and it will become crispy.
Step 1: Cook The Pizza On The Stove
Preheat the OTG and wait for it to come to the set temperature.
While waiting, you can arrange the pizza already on the pizza stone and then cook it first on the stove at medium-high heat.
First, spray some olive oil on the pizza stone and then place it on the stove.
This will start to cook and almost fry the bottom of the pizza, which will help make it crispier later on.
Wait until the crust edges start to release some of the oil underneath, and it starts to brown.
Turn the stove off and then check if the OTG has reached the set temperature.
Step 2: Cook The Pizza In The OTG
Once the OTG reaches 500 degrees Fahrenheit, use a glove to transfer the whole pizza steel with the pizza on it into the OTG. Let it cook for 5 minutes or until the crust is browned.
Allow the cheese to melt over the toppings or until it bubbles before removing the pizza from the OTG.
Again, let the pizza rest for a little bit, and then slice before serving!
You can also do this method using a cast-iron skillet or pan.
The results will be amazing as the cast iron absorbs heat and cooks the crust perfectly with a crispy finish.
No Pizza Stone/Steel, No Problem
If you do not have a pizza stone or pizza steel, you do not have to worry, as you can still use your OTG for cooking your pizza. All you need is a baking sheet, and you are ready to cook,
Baking sheet or cookie sheet does well in cooking pizzas using conventional ovens or even OTGs.
They can help give your pizza a crispy crust and cook the toppings perfectly.
There is also not much needed in the process as you can do it just like how you cook your pizza.
It is easier to transfer as you just put the pizza in the OTG along with the cookie sheet.
It might not be the most conventional or popular way to make your pizza, but cooking pizza with an OTG is easy.
It can produce great results, such as crispy crusts and nice toppings.
