Selecting the Meat

As much as possible, avoid supermarket meats. Search for the freshest meat around you and if you are left with no choice, that is when you go with frozen meat for this recipe.
Ribeye is usually composed of lean muscles and a bone sticking out of the meat. It does not contain a lot of fats but, take note that you are going to need a cut of meat with a little fat in it.
The fats will help tenderize the meat when it is exposed to the flaming hot oven. So if you were to choose fresh meat, get as much of the fat as possible and you can trim it later on.

Season the Ribeye Steaks
Once the meat has cooled down to room temperature, pat them dry with a paper towel. Then, season them with salt and pepper and drizzle a little bit of olive oil on the ribeye steak.
You can also use any rub or you can brine the ribeye if that is what you prefer. But for a simple steak, salt and pepper will do as they will start reducing the moisture from the meat.
Sear the Ribeye Steaks
After the cast-iron dual-sided grizzler plate has preheated for at least 10 minutes and the ribeye steaks have been seasoned already, use tongs to remove the grizzler plate from the oven.
Then, lay the ribeye steaks carefully on the grizzler. Place the grizzler back inside the Ooni Koda and then let the ribeye steaks cook inside it for at least 90 seconds.
Ooni recommends that a 20-millimeter ribeye steak should be cooked for at least 90 seconds. So if you have a thicker piece of steak, you will need to cook that longer than the 20mm steak.
Since the Ooni Koda has its flames coming from the back, you will need to rotate the steak to get a more even finish. You also need to flip them so you get grill marks on both sides of the steaks.
In order to determine whether the ribeye steaks are cooked or not, use a meat probe, and measure the temperature of the meat by inserting it into the center of the steak.
If you are aiming for rare doneness, the temperature of the steak should read 125 degrees Fahrenheit. You can add increments of 10 degrees for each level of doneness.
Resting
Once the ribeye steaks reach your desired doneness, remove them from the oven, and then place them on a wooden surface. Put a knob of butter on each steak and then cover them with aluminum foil.
Let the steaks rest for about 2 minutes or roughly the same time it took for them to cook. This will enhance the juices that are left in the meat and will evenly further cook the meat.
