Selecting the Meat
The first step in cooking a ribeye steak in the Ooni Koda is, of course, to choose the meat. Having a trusted butchery in your area is an advantage so you can buy from there.
As much as possible, avoid supermarket meats. Search for the freshest meat around you and if you are left with no choice, that is when you go with frozen meat for this recipe.
Ribeye is usually composed of lean muscles and a bone sticking out of the meat. It does not contain a lot of fats but, take note that you are going to need a cut of meat with a little fat in it.
The fats will help tenderize the meat when it is exposed to the flaming hot oven. So if you were to choose fresh meat, get as much of the fat as possible and you can trim it later on.
Speaking of trimming, you should leave some of the cartilage on the bone and avoid removing all from the bone. That will actually help the meat tenderize and hold onto the bone.
If you choose frozen meat, allow it to reach room temperature before putting it in the heat. This will cook the ribeyes more evenly and make sure that they are cooked all the way through.
Preheat the Ooni Koda
The Ooni Koda pizza oven uses propane gas as the main fuel so it will preheat evenly and quickly. So preheat the oven to its maximum temperature which is 932 degrees Fahrenheit.
That is around 500 degrees Celsius so it really is for searing. Make sure that the cut of meat you buy is a little bit thin so that the high temperature of the oven will be able to cook it through the middle.
Along with the Ooni Koda, you are also going to use a Grizzler plate for the meat. The Ooni Koda has its own pizza stone but we suggest using Ooni’s Cast-iron double-sided grizzler plate.
This is perfect for searing meat in any Ooni pizza oven. You will need this to prevent leaving grease and meat stains on the pizza stone that is included with the pizza ovens.
So preheat the oven with the grizzler plate inside it before you put the meat on it. It is important to preheat the grizzler plate so that the pizza stone in the Ooni Koda will not break from thermal shock.
Season the Ribeye Steaks
Once the meat has cooled down to room temperature, pat them dry with a paper towel. Then, season them with salt and pepper and drizzle a little bit of olive oil on the ribeye steak.
You can also use any rub or you can brine the ribeye if that is what you prefer. But for a simple steak, salt and pepper will do as they will start reducing the moisture from the meat.
Sear the Ribeye Steaks
After the cast-iron dual-sided grizzler plate has preheated for at least 10 minutes and the ribeye steaks have been seasoned already, use tongs to remove the grizzler plate from the oven.
Then, lay the ribeye steaks carefully on the grizzler. Place the grizzler back inside the Ooni Koda and then let the ribeye steaks cook inside it for at least 90 seconds.
Ooni recommends that a 20-millimeter ribeye steak should be cooked for at least 90 seconds. So if you have a thicker piece of steak, you will need to cook that longer than the 20mm steak.
Since the Ooni Koda has its flames coming from the back, you will need to rotate the steak to get a more even finish. You also need to flip them so you get grill marks on both sides of the steaks.
In order to determine whether the ribeye steaks are cooked or not, use a meat probe, and measure the temperature of the meat by inserting it into the center of the steak.
If you are aiming for rare doneness, the temperature of the steak should read 125 degrees Fahrenheit. You can add increments of 10 degrees for each level of doneness.
Once the ribeye steaks reach your desired doneness, remove them from the oven, and then place them on a wooden surface. Put a knob of butter on each steak and then cover them with aluminum foil.
Let the steaks rest for about 2 minutes or roughly the same time it took for them to cook. This will enhance the juices that are left in the meat and will evenly further cook the meat.
This will allow the fats to also marble and caramelize the meat properly. The melted fats will then seep through the meat evenly which will give every bite a tasty flavor.
Ribeye steaks can be served with anything that you want. Usually, we like to pair it with carbohydrates like rice or potatoes to combine the protein with it.
You can also eat the ribeye steak as it is. Add some vegetables such as asparagus which requires to be cooked with the steaks or just drizzle some lemon juice on the steaks.
