The pizza sauce is perhaps the most important part of the pizza when it comes to flavor. It is based on all the other flavors in the pizza from the crust and the other toppings.

What You Will Need

I used ten tomatoes for this recipe which is roughly ten servings. So if you are planning to cook more than just ten pizzas, you can adjust the recipe to the number of pizzas you will cook.
You will also need a pot to cook the pizza sauce on. Any pot will do as long as all the ingredients can fit inside, but thick pans are preferably better since you will cook for a little while.
Step 1: Prepare The Ingredients
This is a very simple recipe, so you will not need a lot of preparation. Just get the tomatoes and wash them thoroughly under running cold water; get each tomato and wash it carefully.
This is to make sure that no chemicals on the skin of the tomatoes. Some might have toxic ones, especially if you bought the tomatoes from the market as they might be processed.
To ensure that the chemicals are gone, you can get a bucket of water and pour a little bit of vinegar into the water. There, you can wash the tomatoes in it to remove contaminants.
Set the spices and other seasonings on the side, and then dry the tomatoes with paper towels. Cut the tomatoes in half and then set them aside as well while preparing the appliances.
Step 2: Mix The Ingredients
After cutting the tomatoes in half, place them in a food processor and add olive oil and water. You can also use a blender for this; mix the ingredients well until the mixture is smooth.
The consistency of the mixture is better if it is smoother. Your goal is to have a pizza sauce that will be thick enough to cover the dough and light and thin enough to be spread easily.
Set the seasonings and do not put them in the mixture just yet. You need the salt and other spices to melt into the pizza sauce so the taste will continue throughout the mixture.
Suppose you put the seasoning on the mixture while in the blender; they might break down easily and not spread as evenly as you would want them to be. So keep them on the side for now.
Step 3: Cook The Pizza Sauce
Get the pot to the stove and turn up the heat to high. Ensure the pot is dry, and do not let it heat up too much before putting the sauce in it as it might sizzle or, worse, burn when you put it.
Pour the mixture of olive oil and tomatoes into the pot before putting the vinegar and salt in it. Let the heat stay on high and wait for a few minutes to let the salt start melting in the mixture.
Bring down the heat to medium or low, and then allow the mixture to come to a simmer. Let it simmer for 1 to 2 hours with occasional stirring to ensure the bottom does not burn.
Your goal in cooking the pizza sauce is to make sure that the tomatoes extract all of the pulps’ juices and tomato flavors from the pulps. Once it does that, turn the stove off and let it cool down.
Pour the mixture into a large bowl and wait for it to cool down. You can also leave the mixture in the pot with the heat off and wait for the pizza sauce to cool down until you can store it.
Step 4: Puree The Pizza Sauce
Get your blender or food processor once more, and then pour the pizza sauce in it. Make sure not to go over the halfway mark of the blender to puree the sauce properly.
Pulse the blender a few times before holding down the lid and then leaving it on for a few seconds. Your goal is for the pizza sauce to become as smooth as possible in the blender.
Remove the first batch of the pizza sauce from the blender and then blend the remaining sauce in the blender. You can use a single large container or store the pizza sauce in batches as well.
Get a small container and then store the pizza sauce in it with one container serving pizza sauce. Put it in the fridge and use it once you want to cook your pizza.
What If I Do Not Want The Skin And Seeds?
There is no real reason or benefit for removing the seeds or skins of the tomatoes unless you do not want them to ruin the pizza sauce’s consistency, or maybe you do not want the texture.
If you want to remove the seeds and skins from the tomatoes, you can do that after cooking them. This will separate them from the mixture easily just by using a food strainer.
Just pour the mixture into the food strainer and then use a spoon to push down the sauce, leaving the seeds and most of the skin in the filter. Push until all the moisture is gone.
Let the mixture drip into a bowl, and then go to the fourth step to puree the sauce. I like leaving the skins on as it gives a thicker consistency to the pizza sauce.
If you want to make pizzas, it is best to get all the ingredients yourself so that the final product will have the freshest and best flavors. That includes your homemade pizza sauce from fresh tomatoes.
