Just pour the mixture into the food strainer and then use a spoon to push down the sauce, leaving the seeds and most of the skin in the filter. Push until all the moisture is gone.
Let the mixture drip into a bowl, and then go to the fourth step to puree the sauce. I like leaving the skins on as it gives a thicker consistency to the pizza sauce.
